Lemon Butter Baked Scallops

Ingredients

  • 1 Pound Sea Scallops
  • 1 Teaspoon Garlic Powder
  • 1/2 Cup of Butter
  • 1/4 Cup of Dry White Wine
  • 1/2 Lemon Juiced
  • 25 Butter-round crackers
  • 1 Tablespoon Fresh Chopped Parsley for Garnish
  • Salt and Pepper

Sauce

  • 1/2 Lemon Juiced
  • 1/4 Cup Salted Butter
  • 1 Teaspoon chopped garlic
  1. Preheat oven to 350 degrees.
  2. Lightly grease a 8×8 baking pan with olive oil.
  3. Rinse and drain scallops.
  4. Crush the crackers and combine in a bowl with garlic powder and season with salt and fresh ground pepper to taste.
  5. Melt butter. Mix melted butter, white wine, and lemon juice in a separate bowl.
  6. Marinade the scallops in the butter, wine, and lemon mixture for 5 minutes.
  7. After marinading, bread the scallops with the cracker mixture by pressing each side of the scallop into the breading.
  8. Place the scallops in the baking dish in a single layer.
  9. Bake in the oven for about 17-18 minutes, until the breading is lightly browned and the meat is opaque.
  10. While baking, make the sauce by mixing melted butter, lemon, and chopped garlic.
  11. Garnish with parsley.
  12. Serve promptly. Pour sauce to taste on scallops after serving.
