Lemon Butter Baked Scallops
Ingredients
- 1 Pound Sea Scallops
- 1 Teaspoon Garlic Powder
- 1/2 Cup of Butter
- 1/4 Cup of Dry White Wine
- 1/2 Lemon Juiced
- 25 Butter-round crackers
- 1 Tablespoon Fresh Chopped Parsley for Garnish
- Salt and Pepper
Sauce
- 1/2 Lemon Juiced
- 1/4 Cup Salted Butter
- 1 Teaspoon chopped garlic
- Preheat oven to 350 degrees.
- Lightly grease a 8×8 baking pan with olive oil.
- Rinse and drain scallops.
- Crush the crackers and combine in a bowl with garlic powder and season with salt and fresh ground pepper to taste.
- Melt butter. Mix melted butter, white wine, and lemon juice in a separate bowl.
- Marinade the scallops in the butter, wine, and lemon mixture for 5 minutes.
- After marinading, bread the scallops with the cracker mixture by pressing each side of the scallop into the breading.
- Place the scallops in the baking dish in a single layer.
- Bake in the oven for about 17-18 minutes, until the breading is lightly browned and the meat is opaque.
- While baking, make the sauce by mixing melted butter, lemon, and chopped garlic.
- Garnish with parsley.
- Serve promptly. Pour sauce to taste on scallops after serving.
